Enable previous file versions within Office 2016

How can I enable previous file versions within Office 2016 applications (such as Word, Excel, PowerPoint, etc) so that I will be able to go back to previous versions of the document?

I remember this used to be enabled by default but now I don't see this feature enabled.

Office 2016 can read all office documents from Office XP forward. No need to convert. If you open such a file (say.DOC) you need to save it as new file to save as DOCX.  But no issue opening these files.

If you wish old software to still use the files, then just save in the format you opened (say .DOC). That works as well.
Another thing you can do (I do not do this any more) is go to each Office Application, Options, Save and make the default save to be the prior format. I do not do this because there are compatibility conversion add-ons for Office 2003 and Office 2007 up uses the new format.
