I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Since it would be tied to an Ip address, you can attempt to find the mac address, then search which switch port that mac connects to IF you have the proper switches. From there you trace it back to the jack.

This all needs a properly documented network. If you don't have that, you might just have to look at each machine.
There are two approaches that would make sense:
1) Run a scan on your network using a utility like nmap or Advanced IP Scanner. By default, the VNC server uses port 5900. So you could run a scan and investigate any systems with port 5900 open. However, this is not going to be 100 percent accurate.
2) Depending on whether you have a tool like SCCM on your network, you could run a report for systems that have VNC installed.
