Go onto the router that Windows server is configured on and run either show snmp or show snmp community

Are you attempting to sniff the SNMP traffic and capture community strings?
Or do you have access to the server consoles?  
There is a powershell script in the Microsoft Technet script gallery to extract SNMP information from the registry...
