It's hard to recommend a specific one because your requirements and my requirements may be (likely are) different.  They all have similarities and major differences from one another or they wouldn't exist.  Honestly, I don't like RT, OTRS seemed tough to implement... Spiceworks was easy but I've never gotten more than a lukewarm feeling from the SpiceWorks product... I ended up writing my own - which I'm still not thrilled with.  All of them have to be liked by SOMEONE or they wouldn't still be under development.

There are some simple to install and customizable bugtrackers like mantisbt.org.
