Email Distribution by a Group

In our organization, we already have all faxes coming in as emails.  I would like to arrange the following process: fax comes in as email, gets redirected to a group of receptionists, one receptionist forwards the message to the correct recipient, then the message is removed from all other receptionists' mailboxes since it is "handled".  Is this at all possible with Exchange Online?

Exchange does not function in this way.

You either have distribution groups (A collection of people that receive an email sent to the group with no inbox of its own) or shared mailboxes (where multiple users have access to a single inbox and it's subfolders)

Based on what your wrote it would suggest the latter (shared mailbox).  that way when one person deletes the email, it disappears from everyone else's view.  You could also mark them in specific colors to denote which user has addressed the email.
