I wear a lot of hats...

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

The short answer is 'yes', but in reality it will vary from PDF to PDF.

If the PDF is a structured file with text, then you might get a good result or complete rubbish, but if it is a picture (albeit of text) then you'll get nothing without some kind of OCR process, and even then, the results might not be worth the effort.

Much better to try an get the source data if you can.

Alan.

There are a lot of paid and free tools/services that are available outside Adobe, and I believe there is an export capability from Adobe.

One tool I used to turn PDF's into Excel and CSV (and it can be exported to things like JSON and XML) is here: docparser.com.  There are other functions of this software too, but for what you describe it should work.  Do a search on converting PDF to Excel and you'll see a bunch of tools.
 Good luck!
