create a group policy and apply it to the ou with the servers. or use WMI filtering.

Can you provide me with step-by-step instructions on how to do this?

Applying a group policy to an OU is a BASIC task that if you've been managing servers for years (as you have since you've been on EE for years), I'm sure you know how to do.

You can use something like this
select * from Win32_OperatingSystem WHERE Version like "10.%" AND ProductType="3" AND (OperatingSystemSKU = 8 OR OperatingSystemSKU = 12)

You apply GPO WMI filters similarly to the WMI filters in this article
