Basing this on Windows 2012 and up:
1) Based on typical Office application use, each session typically uses approximately 20 kbps for XenApp sessions, 45+ for XenDesktop sessions.
2) How many users a server can handle depends on your use - XenApp density can reach ~60 users on a 24GB VM with 4 cores. XenDesktop can achieve around 30 with the same V-hardware.
3) 1000 users is just math. Xenapp for 1k users would need 17 VMs, XenDesktop needs 34. XenApp would need 410GB RAM and XD 820 GB. Your costs also depend on which version you choose, but $500 per concurrent user for the first year is typical. Setup is a small price compared to licensing costs.
4) I don't understand your question here.
5) Yes, but if you are supporting that many concurrent users, you will need that ram and cpu. If you do not need 1000 active users, you can spin down VMs within your hypervisor's software.

Yes, you can publish web browser to support these applications. And you'll never configure browser settings one-by-one. Otherwise you can access XD/XA via web browser which support HTML5.

5) The vm's which were created using machine cataloge can use the ram and hdd dynamically.
Don't suggest you use dynamic RAM cause performance thinking. And you can use PVS to save HDD cost by IOPS and Size.
