I cant use one piece headset with this

is there another place to change other than
audio settings

I think you are dealing with a hardware problem related to the pinout of the jack.  There are several different standards for the headset jack's pinout and the device you are plugging in has to match what you plug it into.

an earbud headset works
but an earbud headset does not need to work because all I need to do is disconnect one ear and then I will only hear one ear

but if I am using a fancy gaming headset I am forced to use both ears

and
changing settings does not change ears

Up top I suggested you turn off one channel or the other (one ear or the other).

You said that works for the earbuds, but not your fancy gaming headset.

What did you mean exactly?  Are you saying that changing that setting has an effect (of turning off one earbud), but it has not effect on the fancy gaming headset?

If so, maybe the fancy gaming headset is defective?
