Server 2016 has more onerous licensing and charging you more for the same hardware, unless you have software assurance to grandfather you in to your previous hardware model. Microsoft is grabbing income stream that they lost due to hardware manufacturers optimizing to dual CPU multicore core systems with more cores. Previously, 2 CPUs with 2 cores each cost the same as 2 CPUs with 10 cores each. Now, you'll be paying per core.
Although Microsoft has delayed it's retirement, EMET is eventually going away after July 31, 2018. It turns out to be more problematic than helpful. Hopefully, you're not depending on that going forward.
The main advantage of Server 2016 is better group policy integration with Windows 10 without the need to add separate adm files to extend group policy.

EMET has been built into Windows Defender. As a separate product it is being retired.
