Using Azure AD connect with Office 365-How can I remove\disable old on premise mailboxes without removing email addresses from users in AD which are synced with Azure AD connect to Office 365.
Would like to uninstall Exchange 2013 on premise server.

You can't, unless you disable dirsync. That's one of the reasons why you are not "allowed" to remove the last Exchange server for any dirsync-related scenario, as detailed here: https://technet.microsoft.com/en-us/library/dn931280(v=exchg.150).aspx?f=255

If you want to keep dirsync, you can still remove the Exchange server (convert all mailboxes to mail users first), but this will put you in "unsupported" configuration. Meaning Microsoft can deny you support in some cases. Doable, but it's not the recommended approach.
