How to deploy the software to the client side safely so that no one can steal the code and data?

Everything is possible to steal. It is just a question of effort/money. You may reduce the probability of such event in several different ways:

- deliver internet applications running on your servers
- use various security dongles, encryption, and code obfuscators
- calculate the code stealing possibility into the product price
- offer the source code purchase as an option for a surcharge
- develop/deliver new versions regularly so the stolen version becomes obsolete very early

I guess you will need to go yourself to the client and install the software yourself and then remove any unnecessary files.

Offer the on-line demo mode then sell everything incl. source code for client's off-line use with good agreement which makes you rich when the client steels/allow to steal your code.
