During production hours is it recommended to Rebuild SQL Server indexes using the ONLINE option?

Rebuilding SQL Server indexes using the ONLINE option.
Using this option can I reindex the tables during production? What SQL server versions support ONLINE index option? Is any disadvantage using the online indexing?

why do you need to rebuild the indexes ?

An index should be rebuild when index fragmentation is great than 40%. An index should be reorganized when index fragmentation is between 10% to 40%

ONLINE Index Rebuild is supported only in Enterprise edition of SQL Server.

ONLINE Index Rebuild is recommended only on servers which are available 24/7 without any downtime or minimal operations per day.
If you have a maintenance time every day, then it is recommended to go with OFFLINE index rebuilds as it will be faster by blocking the entire table for the entire time taken during Rebuild.
ONLINE Index Rebuilds will have very minimal blocking while index rebuilds are happening and in the process it will take longer time compared to OFFLINE index rebuilds.

Avoid any maintenance task during Production hours. This is the rule #1, #2 and #3 if you want to keep your system stable.
Use the ONLINE option only for urgency cases. Otherwise use OFFLINE and run the task outside of Production hours.
