yes you can.
i had one of my customers have old photocopier, ricoh aficio, and he wanted to do scan to email. his email was on google apps and the ricoh do not support sending with SSL. so i made him scan to hmail server and the hmail server send it out.
I can't say how it compares to others, but I've installed this at a client's office for internal email and it has done the job for them:

there are plenty of open source mail servers, like:
and they are all free and open source
For local mail server duties, hmailserver is imho the best and the simplest (if you intend to use Windows). Secure too (anti-spam/anti-virus possibilities). Also, adds POP3/IMAP support (if just as a relay isn't enough for you)

Thanks for all your replies
I remember using hmail server in the past therefore I will stick with it

The clients actual emails accounts and SMTP server are hosted by a remote provider

Will it disturb anything if I setup hmail to operate exclusively as an SMTP server ?
Apparently OPERA (Hotel PMS) needs a local SMTP server for some functions
