Can Windows 10 updates be scheduled on a network and individually, to prevent updating whilst in the  middle of something,

Windows 10 has an "active hours" setting in the settings app. It continues to improve with each major release and will do what you want.

Yes, and in addition to the above, if the need to Restart pops up, you can defer the restart.

I set Active Hours from 6 am to 9 pm and so Windows can update overnight.
For ages, there has been the policy "No auto restart with logged on users" which you could use. Be aware that it does exactly that, so users leaving there machine logged on overnight will never be forced to restart.
