I work on both Notes and Exchange. Let me tell you, if you are only looking to move mails, then you can use several 3rd party too for easy migration, like Quest etc. However, if you are looking to move application designed in notes, that's not possible. Sametime, you can replace with Skype, if you are using.

If you ask my suggestion, better stick to notes and move to latest notes version. Remember, to mimic notes into Microsoft world, you need to invest in lot of products. AD, Exchange, SharePoint, Skype, meeting, Intune, etc. If you are ready to pay for all that and have skill to support, go-ahead. Keep in mind Office 365 is SAAS, so don't think for any customization.
