Which Server / OS Environment Would Be Most Beneficial?

Our company is looking to implement a server that will not be used in full as a traditional server with AD/DNS etc. We are looking use it as a file server and a place to host our software server service. We need 2 instances of our Software Server running simultaneously as they only attach to 1 database at a time, we currently have 2 workstations hosting each Database individually.

The dilemma here is, would running a middle of the road server with MS Server 2016 allow us to accomplish this task?

Any input would be greatly appreciated.

Sorry, but it's hard to say... what kind of "software server service" do you offer?  You have two databases... you can't change the ports they run on?  One single server license allows 2 VMs so if you set this up properly with VMs, one license will cover two instances, but to know if it's appropriate for you, we'd need a LOT more information.

We use FIshbowl Inventory for our 2 businesses, they run on MySQL using port 3305. I could make it run properly using MySQL Workbench but then I am unable to update the Fishbowl Software. The issue we have is the Fishbowl Inventory MySQL Software will only connect to 1 database at a time.

I agree that more details would be useful, but Lee is correct that you could purchase one Server 2016 license (actually, 8 2-core licenses), install it as a Host that only hosts Hyper-V, and install 2 VMs.

For that matter, you could purchase three copies of Windows 10 Pro and do something similar.
