Migrating SBS2011 to Virtual Environment

Hi,
 
 I have a physical SBS2011 box and like to set it up as a virtual machine in Hyper-V server using Disk2VHD program.
 EE experts said that I should stop all exchange related services before running Disk2VHD program and I understand why ... because you don't want to miss any emails going in and out while VHDX files are being created. I understand that.
 But If I am doing this for a test which is to create a SBS 2011 VM in test hyper-v server/environment (not in production environment), is it still necessary to stop exchange related services?

If it were me, I would stop the services, but is it 100% necessary, probably not.

I don't think so, you need to stop Exchange service for testing. That might cause user outage. Just clone it live and test in test.

No, but to test the migration as closely as possible, I'd perform the exact steps in the lab that I'd be doing in production.

That is what I thought.
I will leave exchange services on and create VHDX.
I do not want to stop email service for so many hours unless it is real migration.
