I would like to know from expert who have experience to convert physical server which is running window server 2018 r2 to hyper-v 2016 virtual machine .
I check on the hyper-v 2012requirement the guest machine is atlease window server 2012.

I don't convert physical machines. Ever. Too many odd issues, performance problems, and other unpredictable things happen after a conversion due to old drivers lingering and looking for their missing hardware.
Install clean. Migrate roles, apps, and data. It's worth the slightly extra effort.

Our application vendor would like to convert two physical to hyper-v 2016 which is running window server 2018 r2.
for this two server is become the test server only because we will clean install and deploy another guest for production.
