Where do logs for administrative changes reside? I mean changes such as the enabling and disabling of connectors etc

They are saved as admin audit logs, you can search for them for specific commands.

Example to found who ran disable-mailbox command

Search-adminauditlogs -cmdlts disable-mailbox

These logs are usually saved for last 30 days you can check the configuration by

Get-AdminAuditLogConfig |fl
