Decommission Legacy exchange servers
We are running on exchange 2010 servers and We have recently moved to O365 and currently. We have 2 sites and in one site we have 4 Mailbox servers and 3 CAS servers and in another we have 3 Mailbox servers and 1 CAS server now we are planning to decommission 3 Mailbox servers and 2 CAS servers so that we can run with minimal number of servers that is one per each role in each site. Now we have moved almost all users to 0365 and looking for the ways or documents to achieve this task, Now i need to prepare document and share it with client which should have all the steps required to perform. Please help me on this. Kindly let me know if you have any questions.

thanks for the details, But question is what all we need to check from other roles like CAS and HUB example:
Mailflow,OWA,Activesync,DA G etc what all we need to check to make sure no traffic is hitting to those servers.

Experts-Exchange Cleanup Volunteer
The first step is to shutdown the server with the legacy exchange, verify that everything works. For security reasons, wait some days in order to be sure that Exchange works without legacy exchange.
After you need to dismount databases in legacy exchange, remove databases,... and try to uninstall exchange in the legacy server.
