Re-installing ESXi will NOT change the RAID configuration, as this is a hardware function, and ESXi has no functions to change hardware RAID.

When you re-install ESXi, it will *DETECT* the current VMFS partitions, where the VMs are stored, when it states PRESERVE datastore, select YES.

When you have finished the installation, and later connected to ESXi browse the existing datastore, and register VMs with the inventory.

You can see an example of this in Step 6 in this EE Article I wrote

HOW TO: Clone or Copy a virtual machine in VMware vSphere Hypervisor ESX/ESXi 4.x or ESXi 5.0

Can i change the version or i can keep the same version 5.5.0
or can i change the version 6.0
You can install any version you like... but make sure you have a license, and your host supports 6.0.
