Did you identify which folder is taking up the space on the VM?

If new files are coming to fileserver there is  possibility of increasing space or space usage everyday..
Tree Size will help. Why do you think it would not?

Space is used up by Temp Files, Update Downloads, and System Information Folder.

How much disk space was allocated to the VM?  Maybe too little.
and what do you do to solve it ?

we are losing 60gb of space every 2 weeks
Within the server, you can list out details of all files like

dir c:\/s > c:\list.txt

against c drive and other drives, and then see which new files are taking up the big space
