How to bill clients and handle my books for Freelancing?

I'm a few months away from starting to take on Freelancing gigs.

I was wondering how to do my books/bill clients.

I had a fantasy about using Laravel to create a separate site on a subdomain that would bill clients and export a CSV. But I've been thinking about using Freshbooks.

I will probably offer subscription services (hosting/maintenance) which I want to bill using the web.

My website will be WordPress.

I'm not sure how to handle billing, and I want to have a good system down when I start. I know that Freshbooks has an API.

What would be the best way to handle this?

Using freshbooks or quickbooks is a good way to keep your books overall.  For managing details such as hosting, there are plug ins for server management panels such as Plesk that will take care of this for you.  https://www.plesk.com/infrastructure-providers/

That will be more work than you want to take on for this unless you are going to use it for a learning experience. Still, I would suggest using something that already exists and build it as a side project and perhaps as you get familiar with the ready made options, you can incorporate some custom options using api's.
