Yes, you can, vCenter Server is just a management server. It does not affect what services and applications are running in your VMs.

Obviously, putting your SQL cluster on a single physical host will not protect you from server failure.

So the only advantage you get is the possibility to perform maintenance on one guest whilst the other remains in production. The trade off is added complexity to set up and maintain the cluster.

Think carefully is this is worth the effort.
