You can achieve that with the help of VBA.
Place the below code on a Standard Module like Module1 and assign a shortcut key say Ctrl + Shift + D to it and save your file as Macro Enabled Workook. And you can press this shortcut key to insert the date time in the active cell.

In the attached, press the shortcut key Ctrl + Shift + D and the code will insert the Date and Time in the ActiveCell.
