Windows Hello Optiom

Is there an easy simple way to remove Windows Hello from a Windows 10 Pro tablet? We are logging in using Azure cloud credentials Thanks

You can block it via MDm or a local group policy. I don't know why you'd want to though.

Just go to Settings - Accounts - Sign-in Options - Windows Hello - and click Remove.
