we would like to learn more about the licensing and hope to save some money. during our initial design and we may have over 20 custom entities and we are afraid that we all have to pay 95.00 enterprise licenses.

Your question is somewhat complex, and the licensing guide is comprehensive, but I think what you are trying to see is whether the Sales licenses are required for all your users.
The fact is that you have 30 Sales People. The question is not whether you have 20 custom entities, as that is somewhat irrelevant, but what kind of processes do your Sales People use. If they are using the Sales Module to perform their work then you need the Sales License (which is the $95/user). If you designed your custom processes, and are not using any of the Out of the Box processes, you might be able to get around using the Team Licenses.
Some of the features that are only available in Sales Module and not in Team Member License are:
Email and Word Templates, Lead Management, Opportunities, Lead Qualification, Competitors, Products, Price Lists, Quotes, Orders, Goals, Territories, Sales Literature, Marketing Lists, Quick Campaigns
The one thing to note here is that if you are replicated any of the features that are part of the Sales module by yourself, in order to "not pay" for the Sales module, that is a violation and you actually do have to pay the Sales Module price (not sure of course if this is ever checked).
