Do you already have an image file with your signature?

IF YES:
Do these steps in OpenOffice Writer:

Insert
Picture
From File
Browse to signature file and select it
Drag the sizing handles to size it (hold down the Shift key while sizing to retain the aspect ratio)
Drag-and-drop it where you want to place the signature

IF NO:
You need to create an image file with your signature. There are many ways to do that. This EE article describes one way:

Another way is to use OpenOffice Writer itself to scan in your signature via these steps:

Insert
Picture
Scan
Select Source (pick your scanning driver)
Insert
Picture
Scan
Request (use the TWAIN or WIA dialog to scan)
Do a Preview scan first (allows scanning just area on page with signature by dragging handles to identify scan area)
Do the actual scan
Drag the sizing handles to size it (hold down the Shift key while sizing to retain the aspect ratio)
Drag-and-drop it where you want to place the signature
