Are you using the default email app on your Android device? Also, what is your email service you are using to send mail from?

If your email app is pulling the display name from your Contacts file on your phone, have you tried changing the name under their contact listing?

You can also try logging into your email service and looking up your contacts there, and editing their name in that location.

Hope this helps,
