Can I have FullText Search on only one table?

This is SQL 2014.

I have a table with 3,000,000 rows something. It has lots of columns and we're thinking about using this flat file as our search table.

Can I have Full Text Search applied to this table only and not affect the rest of the database? My manager says something about FTS is not portable and will be a hassle to port to production database.

We do wildcard search on 6 of the columns

Yes.  Full Text (FT) must be enabled by individual table/column.  Unspecified tables will not be affected.

There is some set up required, but if you plan it out, it's not that difficult to do.
Thanks, Scott.
Another question.... FTS would help even tho we're doing a wildcard search on those 4 or 5 columns?

Typically it does.  FTS allows wildcard searches, with CONTAINS if nothing else.
Thanks, Scott. I'll speak with my manager.
