I wanted to know what was deleted by user recently irrespective of date

if you add the Modified column to your list you should see the date and time if was deleted.  
To do this right click on any header column name and select Field Chooser | select the drop-down and select Mail Items | drag Modified to your columns.

Where should I add the modified columns

You the column any spot you like. I prefer next to received so I can easily compare.

Once added you can sort the modified column

You can check the "Recover Deleted Items" by right clicking on Deleted Items folder. You will find the recently deleted items with date with time.

To check deleted Outlook items from your account, you can follow the steps given below.

1. Check items from Deleted Items Folder
  1. Open Deleted Items or Trash Folder
  2. Go through the items (deleted) in the list

2. Check Items from Recoverable Items Folder
To check permanently deleted items (Shift deleted items or items deleted from Deleted Items Folder) which doesn’t cross Retention period of your Outlook account.

  1. Choose Home tab and press Delete Item folder option
  2. Press Recover Deleted Items From Server option
  3. Recover Deleted Items dialog box appears, and check the item(s) in the list.
