Replace Small Business Server with Windows Server

Our small company currently has a Windows SBS 2011 Standard and a Windows Server 2008 R2 Standard.

The SBS is the DC.  We recently moved our Exchange to a hosted system.  

We have about 45 user/workstations that login to SBS.

The Windows 2008 server is used for our accounting system, inventory system, attendance system and file sharing access.
We would like to remove the SBS and just use the Server 2008 box.

What would we need to do I order to accomplish this?
