What is the best way in finding out if SPF and DKIM records have been changed for a domain

We would like to know how to check our SPF and DKIM records for our domain.

https://mxtoolbox.com/ is a great starting point.
The definitive place to check SPF is Scott Kitterman's validator - he wrote the SPF spec.
SPF u can find out easily from mxtoolbox.com or any other web site that provides functionality
Just put there domain name and hot lookup
But for dkim, you need to find out selector used for record
What you can do, logon to your public dns panel and check all txt records, find one start with V=DKIM1

You asked how to tell if the SPF or DKIM records have been changed.
This seems to suggest you might be looking for historical data, as in the exact date/time one of your records changed.
There's no easy + 100% correct way to do this.
To do this, you would have had to capture SPF + DKIM records over time, then check current values against previous values.

SPF - DKIM test.. (and it will also check spamminess of the mail involved if you like.)

You can send it a mail. (It will provide you with a unique address to send the mail to.)
Easies way to check it to ask for the right record through remote service like:
dig txt example.com
dig txt _selector....example.com
