What do you mean by "event log"?

The term normally means the Windows event logs, which do not rely on a SQL Server database. And you can read the error logs of SQL Server via the filesystem (e.g. C:\Program Files\Microsoft SQL Server\MSSQL12.MSSQLSERVER\MSSQL\Log).

You probably need permissions - else having the protection doesn't make any sense.

The events you will find in the SQL Logs are related to when database are set online, offline or backed up, or errors.

SQL Profiler is a tool that will let you see all the queries/statements sent to the database. But if you don't start the profiler, not much is being kept. You need to understand that there is an overhead when using the Profiler.
