i need to apply GPO to cache emails upto 120 days for outlook 2016 users

where can i edit the settings in active directory and apply

if you can kindly provide the steps

I don't know of a GPO setting in the Office Templates that specify Caching only a certain number of days. You can control how long Exchange keeps email and some archiving settings with Retention policies and Retention tags but I have never seen that level of Control in Outlook. You can setup Auto-Archive via Group Policy as long as you have loaded the Office admx files but this does not control the time for Caching
