Any good quality MIcroSD card will suffice, SanDisk, Kingston, HP - ESXi is designed to run and boot from flash.

If you are planning vmotion for disaster purposes, I would sincerely recommend a san for storage and not local drives. If a server goes down, you can't move VM's to other hosts if you use local storage since the drives go off with the host.

RAID stands for Redundant Array of Independent Disks.
