Instead of Disabling In Default App Settings you can choose default apps by file type.
And change html , htm , mht , mhtml , partial , shtml , svg , vdw , vdx , vsd , vsdx , vss , vssm , vssx , vst , vstm , vstx , webp , website , xht , xhtml
to open with the browser of your choice.

Edge is an integral part of OS hence it cannot be completely removed from the system. As some things might be dependent on Edge, using Cmdlet to uninstall it might cause more problems to you.
Its good to change default browser and leave Edge as it is.

Renaming the exe or the Edge folder is just tweaks only and MS not recommending it.

Do NOT remove Edge. It is used for Windows, Help, Control Panel functions well beyond browsing.
Do you have information that truly backs your comment?
On Windows 10, it is one of the best browsers as well.
This a matter of opinion. I think if you took a survey Edge would most likely fall in last place.
Edge is a top notch browser technically but usage is not that high so a survey would not be all that helpful.
