Generally, I use a mirror port on the switches so I can look at just one of the other ports on the switch.
Then, I use a separate NIC that connects to the mirror port.
Then, I use a dedicated cable from the mirror port to the PC NIC.
Then, I use Wireshark to monitor that NIC.
The NIC has no IP address nor Windows File and Printer sharing as it is just getting data direct from the mirror port.
This works fine AS LONG AS the switch is getting the essential information to the mirror port. That's the "no" part. There are cases where this doesn't work. In these cases you may need to use a network TAP (that acts more like a HUB - not a switch) so that all the traffic is presented. These are inserted in one of the cables which has the traffic of interest. Then you can use Capture Filters in Wireshark to limit the amount of data collected and stored and then use Display Filters in Wireshark to limit the amount of data that you will be observing.
