To do this effectively, you need all the components I mention below minus perhaps Netscaler if you only want "internal".  Although I recommend Netscaler for Internal as well.  Pointing you to an article that outlines the steps to publish an application will not necessarily make those applications available to anyone external without the components I describe below.  My goal is to merely provide you the best possible answer to your question.

One example: Publishing an application happens relative to Citrix XenApp/XenDesktop / StoreFront Server(s) / Studio / the "Delivery" Controller(s) / NetScaler / License Server / Profile Management / Citrix Receiver - to name a few - and Services such as XML, Secure Ticket Authority, Broker Service - to name a few - and how these talk to Active Directory.

Video and books don’t really connect all these dots… It is a combination of those two things and setting up your Test environment and going through the motions.

One option is to purchase a digital online membership with Safari Books Online which was recently Purchased by O'reilly.
https://learning.oreilly.com/accounts/login/

They give you 7 days no charge to look at their content.  A search for Citrix books is about 1100 books.  A few examples:
Citrix XenDesktop® Cookbook - Third Edition
Mastering Citrix® XenDesktop
Citrix® XenApp® 7.x Performance Essentials

I suggest this because not only do you get the most relevant books on Citrix but Microsoft, Cisco, and others if interested.  You can search for specific content and it will return the chapters that are relative instead of having to read the entire book(s).

You will want to stick with books 7.x and later.  Each has own merits.  One is not necessarily better than the other....it's all in the Citrix documentation regardless.  However, some of the books do a better job of consolidating and organizing the information and provide some history and background of how Citrix started and provide some historical perspective.  However, your best option is not to read just one book, best read them all.  Each author provides a relative and subjective perspective than only once reading them all can you really get an "idea".

You will get a better experience, IMO, using the "Master Series" Video Series offered by Citrix by way of YouTube and the Advanced documentation articles offered by Citrix Online combined with a Lab Environment and walking through these steps one-by-one.

Go to YouTube and search for “citrix master class”.

Some of the video’s will be for earlier versions of Citrix like 7.6 which are still very relevant.

I would recommend starting with:

XenDesktop Master Class: Live Install of XenDesktop/XenApp 7.6
https://www.youtube.com/watch?v=Fv-XEsniMu8

If you go to Youtube and search for "citrix master classes" you will find a wealth of information in-of-itself.

The documentation matters relative to versioning as well.  Not necessarily for 7.6 LTSR version 7.15 LTSR or the non-LTSR releases but at some point might between the Desktops and Apps and Cloud and the "non-Cloud".

Review the Admin Guides as well:  XenApp/XenDesktop Admin Guide here:
https://docs.citrix.com/en-us/xenapp-and-xendesktop

From here you can download the entire PDF admin guide and using TOC you can easily locate the steps to publish an application relative to the version of Citrix your wanting to use....for Example... 7.18. (Link) https://docs.citrix.com/en-us/xenapp-and-xendesktop/7-18.html
