MS documentation does not list a hard limit to the number of connections.  I know I have over 10 on most of the mailboxes in my domain.  between outlook, mobile devices and other BYOD devices I have yet to see a hard limitation.
There really isn't a way to limit devices connected via IMAP because the IMAP protocol isn't able to track that. You will, however, run into the maximum active connections per mailbox limit after a while.

Vasil is correct. The above shows how to effect the server side limit.

Also, in each IMAP client, you can also set number of concurrent threads. Default various from 5-10 connections for different clients.

You can easily raise or lower this limit by changing the per mailbox account settings in your client.
