Can Server storage be automatically written over as it reaches capacity?

Is it possible to have data stored on a Windows server and when it starts to fill up it overwrites the oldest data.  e.g. like a DVR.  We are looking into a surveillance system and they want to store the video data on a server.

Or is there a better way to store the data?  It will be streaming over the internet.

Oldest files on my PC are the ones it needs to boot, not good to delete them.

There will be some software included with your cameras that deals with archive/delete.
