Hi CocosDad,
Please make sure Exchange can reach domain controller and its healthy.
Please make sure server has enough free space in System drive as well as Exchange installed drive.
Please check eventviewer in server for related errors/warnings.
Please check MS Exchange AD Topology service is running if not please check your Domain Controller health.
If DC is healthy please check for any change in  AD Sites and services or AD sites and services configured properly.
Try switching off windows update service.
Hi CocosDad

please check eventlog (eventvwr.msc) why they stopped. 99% of the reasons why they stopped is logged there.
Could be anything, even a Backup software. Or they do not start after a reboot (because windows updates)

Are you checked if there is an unexpected reboot of VM has occurred ?

ALL Exchange services don't stop by themselves. The only time I can think of when this happens is when a security patch or a cumulative update is applied. I would guess that someone (which may include Windows Update, if you have the appropriate box selected) attempted to patch Exchange and failed.

You can figure this out, although it is a little painful, by examining C:\ExchangeSetupLogs\ExchangeSetup.log.

Thank you all for your advice. Rather then spend time and money trying to determine why all the Exchange services have stopped 3 times over the last 2 months, I will probably move the 12 users to Office 365.
