following step by step Deploying MS office using SCCM on the link above, the Author mentioned the usage of XML file.
I am not sure if that xml file will be created by Office Customization Tool or we manually need to create it. Also what do we need to put in it as most of SCCM admins do not know about xml language.
Any clarifications will be very much appreciated.

If you are looking to deploy Office 365 or 2019, you can this directly through SCCM and it will create the XML file for you and create an application. Look in Software Library -> Office 365 Client Management, then in the right hand pane look for 'Office 365 Installer'.

Yes. If you go through that and submit it, SCCM will download the necessary files, generate the XML file and create an Application for you that you can then distribute and deploy. See the following link for detailed instructions:
