Add a second Exchange hybrid server

I have an Exchange 2013 hybrid server. I have completed the mailboxes migration to Office 365. After three months there  is no problem. I would like to decommission the physical server and replace it with an Exchange 2016 hybrid server. Could I add a different MRS Proxy Address to the new server? From my understanding this can be done, as long as I add a cert with that name and also include that cert in the old server. Should I expect any impact with that new configuration or even after the old server is removed? Thank you for your feedback.

You mean MRS Proxy endpoint ? Yes you can... Microsoft recommends to have many endpoints to increase migration performance for large organization..
I'd follow MAS,

Don't Uninstall and then install. (this will remove the organization from the AD, and will bring a nightmare for you) :)
Install 2016 server and then uninstall 2013
