I want to create a permission to allow a user in SharePoint to only be able to add a document to a library, but not to view anything in that library.

You could create a second library that has a workflow that will move the file in to a different library when the file is uploaded.

Good luck...

You can also use the 'email documents to doc library' option. They will email the document and the document automatically loads to the library.

I have a workflow in the original library that moves the document, however, it will not allow the movement because the 'creator' does not have access to that library. If I give him access, the files/forms move appropriately. However, we do not want him to have access in that library.

if you're moving through workflow, should be able to use a system account to move items.
You may want to give this a look.
