Office 2016 changed (modernized) and then changed back????

Yesterday, I was working with Office 2016 Excel and Outlook as usual and noticed some very strange changes:

In Outlook, if I opened a message, the reply, reply all and forward selections were in a modernized symbol over on the right side.
Adding addressees in the To: line was supported by a very cool often-used list of names with colorful circle icons with the first initial.  This seemed like a very smart list and all one had to do to add an addressee was to click on a name.  
The delete icon next to each message was a trashcan instead of an "X".
In Excel, the familiar "Tell me what you want to do" was missing and I could NOT figure out how to get it back.
Also, setting row height automatically wasn't to be found.

Today, everything is back to normal.

Yesterday. You are using Office Online app.

The description in your question suggests that you were using Office Online apps instead of desktop apps on yesterday.

Jackie Man:  Yes, I understood that from your first answer.  So now I know WHAT I was using.  The question now is HOW did that happen?  I didn't do it intentionally.  Yet, my impression from your answer is that it isn't something that could exactly happen by accident, eh?  Any ideas?
