I am using Migration Assistant to transfer data from my old PC to a Windows 10 partition on my Macbook Pro but the process has got stuck half way through on copying One Drive. I am using Bootcamp

IMHO, you should stop/skip the Onedrive sync folders from copy.
Make sure you have a separate backup of all data on the old win10
Connect Onedrive on the bootcamped win10, and see if you can access the data

Wbadmin to backup the data on the source
Restore the data.

You are not saying how or what you are using to copy data.
Drag/drop robocopy, sync toy (GUI admin to robocopy)
As far as I know, the Migration assistant app will only migrate to the Mac partition, not the Boot Camp Partition.  It's meant for moving your settings from 1 Mac to another, or from a Windows System to a Mac.

If you want to transfer from Windows to Windows, just use robocopy for regular data files.  Otherwise use Transwiz if you need to keep all settings. https://www.forensit.com/move-computer.html
