Epson TM-U220B printing everything in red

I’ve got an epson TM-U220B printer, that’s used with restaurant specific software to print orders. printer is supposed to (& normally does) print most things in black & special additions, etc., in red, but recently started printing everything in red! switching ribbons doesn’t help, as it prints right at first & then, print will go to a combination of red & black & eventually to all red. printer is physically about an hour away from me & is a network printer, so I didn’t want to do anything too drastic, like reset to factory settings, if at all possible.
any idea what could be causing this?

I wonder if that "Default dining option prints in black" is unchecked on that machine. Could be your problem.

dinerware is the software I’m using. the only way to print red is options for choices, like side orders or other options (IE, temperature, etc).

apparently, it’s a physical problem with the printer, having it replaced under warranty.
