Formatting a Flash Drive FAT32?/exFAT?/NTFS? Allocation Unit Size?

What's the difference formatting a 32 gig USB 3.0 flash drive with FAT32, exFAT, or NTFS?
How about allocation unit size?

Finally, how can I evaluate the brands of flash drives?

also fat 32 is compatible with ALL os, NTFS not
